The Personal Chef Service is a weekly or bi-weekly service which
provides a set number of meals for a household to consume during this
period. A typical service would be four meals for two people (a total of 8
portions). A weekly service package of this size would require
refrigeration only (no freezing). The goal is to provide restaurant quality
meals that are nutritionally and price competitive with take-out.
The meals I prepare are balanced and portion controlled. I use organic
products, hormone-free meats, etc whenever possible. I tend to stay away
from the use of dairy products such as butter and cream. The majority of
dishes, when sauced, are done so using vegetables, fruits, nuts and stocks.
The menus seldom repeat over the course of a year and tend to be seasonal.
Every new service begins with an interview to determine any dietary restrictions
or goals, what foods are liked and disliked. Barring any dietary
requirements, the meals usually consist of approximately 6 ounces of
protein, 4 ounces of a starch or grain and 4 ounces of a green vegetable.
Additional portions, extra meals and requests such as desserts can always
be accommodated.
All foods are prepared in your kitchen. I arrive with my cook kit and
the food purchased that day. Typically I occupy your kitchen for 2½ to 3
hours. Everything is cleaned up upon departure and the foods are packed,
labeled and stored in your refrigerator. The service is priced based on
time and material. A typical 2-person/4-meal package will generally run
between $120 and $125. A typical 2-person/5-meal package will generally run
between $150 and $155. Pricing ultimately depends upon the complexity of
the menu and the types of food bought (shrimp being more costly than
chicken for example).
